Gussy’s Cafe Opens in Jersey City
On June 20th 2022, Gussy’s Cafe had their official grand opening at 340 Third Street in Jersey City bringing a whole new brunch menu to Jersey City.
The cafe is owned by husband and wife Gus Theodosiuo and Nicole Pina, who moved to Jersey City two years ago and were instantly taken with the city’s vibrancy. “We saw so much potential in this area…and we fell in love with the people, the vibe, [and] the community,” said Pina.
Both Pina and Theodosiuo have spent their careers working in hospitality; Theodosiuo with 20 years of culinary experience in restaurants. The pair planned to use their combined expertise to open their own restaurant, and when they moved to the area, they saw an opportunity to fill a need in the neighborhood and create a friendly gathering space.
The former FM Bar venue proved to be a perfect spot for their new venture. Renovations began in January of this year to transform the location into an airy, inviting cafe with bright colors and plenty of seating for guests to dine, work, and socialize.

Where did the inspiration of Gussy’s Cafe come from?
Theodosiuo’s previous culinary experience included years working in diners. When designing the concept for Gussy’s, they sought to incorporate elements of a successful diner, including efficiency and an atmosphere where everyone knows your name.
However, Gussy’s is a contemporary, fast-casual concept that strives to put a modern twist on American staples and brunch classics.
What’s on Gussy’s Cafe menu?
The upscale cafe menu features a variety of fresh, made-to-order sandwiches, burgers, and salads so you can “brunch all day.” There’s a full coffee bar with specialty coffee options for caffeine lovers and plenty of baked goods (made on-site) if you’re in the mood for a sweet treat. They’re also serving up fresh fruit smoothies and refreshing signature drinks, including Lavender Lemonade or a Macadamia + Lavender Matcha.
Don’t skip the Gussy, the cafe’s signature sandwich, made with crispy breaded chicken cutlet, bacon, chipotle mayo, and American and cheddar cheese on a fresh garlic ciabatta roll.
The brunch spot is open daily from 8:00 AM – 8:00 PM, and menu items are available all day.
There is also a retail section within the store offering artisan snacks and pantry items focusing on sustainability or organic ingredients. In the future, they plan to partner with local businesses to showcase locally made products.
The new brunch spot has plenty of seating, and they welcome remote workers to stay. “Come hang out, come work here, bring your family, bring your kids – this is the spot,” said Nicole. “This one of the biggest [cafe] spaces in this area, so we’re happy to have you here.”
The Gussy’s cafe has also installed a quick pick-up area for to-go orders and has plans to go live for delivery and online ordering on Uber Eats, Door Dash, and Seamless soon.
