Mountain cuisine typically has an infusion of herbs and most dishes include various types of potatoes, vegetables, beef, alpaca, guinea pigs, and lamb. Coastal cuisine includes seafood and various types of peppers. Ruth also says that there is a big Japanese influence on the cuisine.
